Cocoa Amaretti Cookies

Sometimes all we need is a really easy cookie recipe that looks hard. One that will make your friends, coworkers, family members, and even pets awe at your pastry skills. They don’t have to know it took 30 minutes. These gorgeous amaretti cookies are stunners for any holiday gathering, if they even make it there before being devoured!

Ingredients:

2 cups almond flour
1 cup granulated sugar
3 tbsp cocoa powder 
pinch salt
2 large egg whites 
1/4 tsp lemon juice
1/2 tsp almond extract
Confectioners’ sugar, as needed
Chefs Life Cooking Spray, Original

Method:

Preheat the oven to 300 degrees F. Line a sheet tray with parchment paper and spray with Chefs Life Cooking Spray. In a large bowl, whisk together almond flour, sugar, cocoa and salt until evenly incorporated.

In a mixing bowl or the bowl of a stand mixer fitted with the whisk attachment, whisk egg whites and lemon juice until they hold soft peaks.

Add beaten egg whites and almond extract to dry ingredients and stir until mixture forms a soft, sticky dough, kneading with your hands if necessary. Lightly dust your hands with powdered sugar. Use a small cookie scoop to portion dough into 1-inch balls. Roll into a smooth ball, then roll in powdered sugar. Arrange on parchment leaving 1 inch between the cookies. 

Bake for 30 to 35 minutes until tops are cracked and bottoms are firm. Remove from oven; let cool a few minutes, then transfer to wire racks to cool completely. Cookies will keep at room temperature in an airtight bag or container for up to 5 days.
