Brie + Cranberry Puff Pastries 

Whether you have an extra bag of cranberries lying around or exactly 45 minutes until Friendsgiving and you don’t know what to bring, these brie and cranberry pastries are as easy as pie… except they aren’t pie. A touch of bourbon with brown sugar is the ultimate treat for the 21+ crowd. 


Ingredients: 

  • 1/2 tbsp Chefs Life Extra Virgin Olive Oil 
  • 1 cup cranberries
  • 2 tbsp brown sugar
  • 2 tbsp bourbon
  • 1 tsp cinnamon
  • 1 sheet puff pastry, thawed if frozen
  • 1 wheel brie cheese, cut into 12 pieces 
  • coarse sugar
  • 1 egg, beaten

Method: 
In a large bowl, combine the cranberries, EVOO, brown sugar, bourbon and cinnamon. Toss gently until allis combined and the cranberries are coated. Set aside. 
Preheat the oven to 425 degrees. On a lightly floured surface, roll out the puff pastry just lightly until even. Cut into 6 squares and place them on a parchment lined baking sheet. 
On each square, place two pieces of brie, then cover with the cranberry mixture, leaving about ½-1inch all the way around. Fold the corners toward the center to frame the pastry. Brush all corners with the beaten egg and sprinkle with coarse sugar. 
Bake for 20 minutes or until the pastry is golden brown.
