Caramelized Honey Persimmons Over Ice Cream

5 minute dessert alert! Nothing says fall quite like persimmons. Don't have those on hand? Sub in apricots, plums, berries, even figs would work here. Great for the last minute dinner party or the last minute sweets craving, you probably won't want to share anyway.

 

Ingredients:

4 tbsp honey

1/2 tbsp Chefs Life Extra Virgin Olive Oil

1/2 lemon, juiced

4 sliced persimmons

Good quality store bought ice cream

 

Method:

Cook the honey in a small skillet over medium heat until bubbling and slightly caramelized, 4-6 minutes.

Add Chefs Life EVOO and lemon juice and swirl the pan until dissolved. Add persimmons, cut side down, and cook until slightly softened a bit broken, 3 minutes. Remove from heat and toss fruit to coat.

Scoop ice cream into a cup, pour fruit over the top and enjoy.
