Ingredients:
- Chefs Life Cooking Oil
- 2 lbs whole Campari tomatoes
- 4 cloves garlic, peeled
- 1 onion, cut into quarters
- 1 small handful basil leaves
- 1/4 cup parsley
- 3 whole sprigs thyme
- 2 tsp salt - start here and season to taste
- 1 tsp pepper
- 1/2 cup vegetable broth
- 1/2 cup cream or coconut milk for dairy free
- Chefs Life Extra Virgin Olive Oil, for finishing
In an oven safe pot, combine Chefs Life Cooking Oil, whole tomatoes, garlic, onion, herbs, salt and pepper. Bake at 450 in the oven for about 35 minutes, or until the tomatoes are blistered and onions are soft. Remove the pot from the oven carefully and discard the thyme. Pour in the vegetable broth and and cream. Using an immersion blender, blend until smooth. Season with more salt and pepper to taste. Serve with a drizzle of Chefs Life Extra Virgin Olive Oil and a couple fresh basil leaves.
