Ingredients 

1.5 cups Chefs Life Cooking Oil 
1 whole head garlic, sliced thinly 
3 shallots, thinly sliced 
1 cinnamon stick
2 pieces star anise
2 wide pieces orange peel
1/3 cup mix of black and white sesame seeds 
1/4 cup chili flakes
2 tbsp sugar 
2 tbsp soy sauce 
Method 
In a medium pot, combine the Cooking Oil and the sliced garlic, bring to medium heat and cooking for 12-16 minutes, stirring occasionally. When the garlic is golden brown, remove it from the oil using a slotted spoon and set aside to cool completely. 
In the pot with the oil, add the shallots, cinnamon stick, anise, and orange peel. Cook another 12-14 minutes, breaking apart any clumps that may form. Remove the shallots once golden and set aside with the garlic. You will still have the spices and orange peel in the pot. Add in the sesame seeds and cook another 1-2 minutes, then add in the chili flakes for an additional 3 minutes. 
Remove the pot from the heat and place it in the sink. Stir in the sugar and soy sauce, standing back from the sink- this will sizzle and can spit oil. Using a whisk, stir the mixture together then set the pot aside to cool completely. While the oil cools, chop the garlic and shallot into small pieces. Once the oil is cooled, add back in the garlic and shallot. Remove the orange rinds, cinnamon and star anise if desired. Pour the oil into an air tight container and store in the refrigerator until use.
