Four Berry Jam Cake
Fun fact: any cake can be a snacking cake. You simply have to lean in to the wonders of eating whatever you want, whenever you want. Filled with juicy four berry jam, it's basically a health food.
Ingredients:
Four Berry Jam Snacking Cake
3/4 cup granulated sugar
2 large eggs
1 cup sour cream
1/2 cup Chefs Life Cooking Oil
1 tsp vanilla bean extract
3/4 tsp kosher salt
1 + 1/2 cups Bob's Red Mill AP Flour
1 + 1/2 tsp baking powder
1/2 tsp baking soda
2/3 cup four berry jam (but any jam will do)
Method:Â
Preheat the oven to 350. Line an 8x8 pan with parchment. In a large bowl, whisk together the sugar, eggs, sour cream, Cooking Oil, and vanilla. When smooth and double in volume, add in the flour, baking power, salt, and baking soda. Mix until the batter is smooth, about 4-5 minutes.
Pour the batter into the prepared pan, it will be thick!
Using a tablespoon, dollop the jam evenly in 6 circles on the top of the batter. Using a knife or chopstick, swirl the jam down into the batter. Bake for 35-45 minutes, or until golden brown and a toothpick comes out clean.
