Goji Berry + White Chocolate Chunk Cookies

Ingredients:
2 ¼ cup all purpose flour
1 ½ tsp cornstarch
1 tsp baking soda
½ tsp salt
½ cup Chefs Life Cooking Oil
¾ cup brown sugar
½ cup granulated sugar
1 egg + 1 egg yolk
2 tsp vanilla extract
¾ cup white chocolate chips
½ cup goji berries
Method:
Preheat the oven to 325. Line two baking sheets with parchment paper. In a large bowl, mix together the flour, cornstarch, baking soda, and salt. In a separate bowl, whip together the Cooking Oil, sugars, egg, and vanilla. Fold the flour mixture into the egg/sugar mixture until dough is formed. Fold in the chocolate and goji berries.
Using a ½ cup measure out 6 balls of dough and place on sheet pans, leaving at least 6 inches in between. Bake for 20-25 minutes, then let cool on the pan completely. They will finish cooking on the hot pan, so don’t be tempted to move them too early.
