Grilled Peach, Cherry, Tomato + Burrata Summer Salad
If you were waiting for a sign to grill peaches, THIS is your sign. Served next to juicy tomatoes, luscious cherries, and creamy cold burrata, this dish has summer entertaining written all over it.
For the dressing-
1/4 cup Chefs Life Blending Oil
2 tbsp white wine vinegar
2 tsp honey
1/2 shallot, finely chopped
Juice of 1 lemon
2 tbsp chopped fresh basil
1 tbsp chopped fresh oregano
2 tsp chopped fresh dill
2 tsp chopped fresh thyme
kosher salt and black pepper to taste
for the salad:
3 ripe but firm peaches, sliced
1 cup dark cherries, pitted and halved
1 pint cherry tomatoes, halved
2 large balls of burrata
1/2 cup toasted, salted and chopped pistachios
In a mason jar, combine all the dressing ingredients and shake for 30 seconds to emulsify.
For the grilled peaches, coat the grill or grill pan with Chefs Life Cooking Oil. Heat to medium-high. Place the peach slices on the grill pan or grates. Grill 2-3 minutes per side or until it has grill lines. Remove from heat and set aside.
On a large plate, arrange the grilled peaches, cherries, and tomatoes. Tear the burrata in half and place the four pieces. Pour the dressing over the salad, then garnish with pistachios. Serve with a toasted baguette slathered in Chefs Life Finishing Oil.
