Grilled Steak Salad with Bleu Cheese
With summer in full swing, we are warming back up our grilling skills at Chefs Life HQ. What better way to kick off warm weather than with a grilled skirt steak and bleu cheese salad? Are you a bleu cheese fan? Comment below!
Chefs Life Cooking Oil-for the grill
2lb skirt steak - room temperature
2 tbsp Chef Kenny's Moroccan Spice Blend
Coarse salt + pepper
1/2 red onion, sliced into rings
1 cup sweet cherry tomatoes, halved
1 head romaine, roughly chopped
1 avocado, sliced thinly
4 oz bleu cheese
Bleu cheese dressing
3 tbsp Blending Oil
1/2 cup mayonnaise
2 tbsp sour cream
1 lemon, juiced
1 tbsp white vinegar
4 tbsp chopped chives
1 tbsp heavy cream
4 oz bleu cheese, crumbled
Fire up the grill to medium high and let it get hot for 10 minutes. Make sure to coat the grill with Chefs Life Cooking Oil! Meanwhile cover the skirt steak on both sides with the Moroccan spice, salt and pepper. Place on the grill for 4-5 minutes each side. Let rest for 10 minutes then slice thinly and set aside.
Make the dressing while the steak is resting. Combine all the ingredients in a bowl and mix until completely combined.
To make the salad, grab a large platter and layer the steak, tomatoes, onions, and avocado equally. Drizzle with the blue cheese dressing, crumble with extra blue cheese and garnish with chives and freshly cracked black pepper.
