Homemade Twix Bars

Homemade Twix Bars 

Every so often you need a W in the kitchen, and when that time comes, these homemade Twix are a show stopper. Chefs Life is here to make you a kitchen hero.

Ingredients:

1 cup finely shredded unsweetened coconut
1/2 cup almond flour
1/4 cup Chefs Life Cooking Oil
2 tablespoons maple syrup
1 1/2 teaspoons vanilla extract
1/2 teaspoon flaky sea salt, plus more for topping
3/4 cup real maple syrup
1/2 cup canned full fat coconut milk, cream only
¼ cup coconut butter
12 ounces dark chocolate, chopped
1 tablespoon Chefs Life Blending Oil

Method: 

Preheat the oven to 350 degrees. In a mixing bowl, combine the coconut, almond flour, Cooking Oil, maple syrup, vanilla and salt. The dough will be sticky when it comes together. Press the dough into an 8x8 parchment lined baking dish and bake for 12-15 minutes, under the edges are golden brown. Once the bottom layer is done, pop it in the freezer to cool completely.
While chilling, make the caramel layer. In a medium pot, cobine the maple syrup and coconut cream. Bring to a boil and let it cook on medium/low for 10-15 minutes, or until thickened. Add in the salt and coconut butter, stirring so it’s completely melted. Let cool 5 minutes, then pour on top of the cookie base and return to the freezer until set, about 15-20 minutes.
Melt the chocolate in a double boiler with the Blending Oil. Remove the caramel cookie from the freezer and cut into 6 even bars. Dip each bar in the melted chocolate, placing on wax paper once coated. Sprinkle with sea salt after the chocolate is set. Store in the freezer or fridge.
