Jennifer Anniston's Famous Salad
Looking for an easy make ahead lunch that'll last all week? We had to give the viral Jennifer Aniston salad a try. With bulgur wheat, pistachios, chickpeas, feta, and lemon, this salad won't wilt after a few days in the fridge. Have you tried it? Comment below!
1 cup cooked bulgur wheat, cooled
1/2 red onion, diced
1/2 cup parsley, finely chopped
1/2 cup mint, torn
1/2 cup chopped pistachios
1/2 can of chickpeas
1/4 cup feta cheese, crumbled
Juice of 1 lemon
Chefs Life Finishing Oil
In a large bowl, combine all ingredients from the bulgur to the feta. Toss to combine. Squeeze the juice from the lemon, then drizzle with about 2-4 tbsp of Finishing Oil. Sprinkle with salt to taste.
Suggested use: beet jam + greek yogurt skillfully piped onto a delicious piece of thick cut toast.
