RECIPE:
- 1 lb organic ground lamb
- 2 tbsp Chefs Life Blending Oil
- 1/2 onion, diced
- 1 tsp coriander
- 1 tsp cinnamon
- 1/2 tsp cumin
- 1/4 cup mint, finely chopped
- 2 garlic cloves, finely diced
- 1 1/2 tsp sea salt
- 2 tbsp Chefs Life Cooking Oil
In a medium bowl, combine all the ingredients, except the Cooking Oil. Mix by hand until all ingredients are well incorporated. Wash hands and set bowl aside. Line a pan with parchment to place meatballs.
Using a 1 inch cookie scoop or large spoon, scoop the lamb mixture into the palm of your wet hands and roll into a ball. Place the balls on the sheet pan.
Heat a cast iron pan over medium-high with the 2 tbsp Cooking Oil. Brown the meatballs on each side for a total of about 8 minutes. Finish in the oven at 350 for 15 minutes or until cooked through.
