Grilled Halloumi & Melon Salad with Herb Drizzle | In Collaboration with Fresh Thyme

Grilled Halloumi & Melon Salad with Herb Drizzle Recipe:
Ingredients:

1 small watermelon, chopped into bite-sized cubes

1 small golden honeydew melon (or melon of choice), chopped

2 blocks halloumi cheese
- 6-8 heirloom tomatoes

Herb Drizzle:

1/4 cup freshly chopped herbs (such as chives, parsley, cilantro, mint, basil – mix and match your favorites)

Juice of 1 lemon

Salt to taste

Instructions:

Prepare the Melons:
Chop the watermelon and golden honeydew into similar-sized pieces. Arrange them on a serving platter or in a shallow bowl.

Make the Herb Drizzle:
In a small bowl, combine the chopped herbs, Chefs Life Extra Virgin Olive Oil, lemon juice, and a generous pinch of salt. Mix well and set aside.

Grill the Halloumi:
Slice the halloumi into thick slabs. Heat a grill pan over medium-high heat and add a splash of Chefs Life Cooking Oil. Once hot and sizzling, grill the halloumi for 2–3 minutes on each side until golden brown.

Assemble the Salad:
Cut the grilled halloumi into cubes similar in size to the melon pieces. Scatter over the melon.

Finish and Serve:
Drizzle the herb oil over everything. For a little heat, top with chopped chili or red peppers. Serve immediately while the halloumi is still warm.
