Ora King Salmon Crudo with Fried Capers 

Life hack- make this salmon crudo when you want to feel fancy with minimal effort. Fried capers are the salty crunchy accoutrement you didn't know you needed in your life. Go a step further and put on your 'out of office' while enjoying this for an al fresco lunch.

Ingredients:

1/2 lb. fresh sushi-grade boneless, skinless Ora King salmon
2 tbsp Chefs Life Cooking Oil
2 tbsp capers, drained
Juice of 1/2 lemon
2 tbsp minced fresh flat-leaf parsley
2 tbsp Chefs Life Blending Oil
I1/4 red onion, very thinly sliced
Flaky sea salt + pepper to taste
Lemon wedges for serving
Chefs Life Finishing Oil

Method: 

Slice the salmon against the grain and arrange on a large plate. Chill the in the refrigerator for 15 minutes while you prepare the rest.
In a skillet, heat the Cooking Oil over medium high heat and add in the capers. Fry until crispy, about 6-7 minutes. They will open up like little flowers. Drain and set aside. In a small bowl, combine the Blending Oil, parsley, and lemon juice with sea salt and pepper to taste. Whisk to emulsify. Take the salmon out of the fridge, pour the parsley lemon dressing over the salmon. Garnish with red onion slices, fried capers, and extra parsley. Drizzle with finishing oil and a sprinkle of salt. Serve immediately.
