Pão de Queijo
Pão de queijo, aka Brazilian cheese bread balls of bliss. Easy to make, even easier to "accidentally" eat the whole pan before it makes it to the dinner table.
4 cups tapioca flour
1 1/4 cups milk
1/2 cup water
6 tablespoons Chefs Life Cooking Oil
1 1/2 cups grated parmesan cheese
1 cups shredded Mozzarella cheese
2 large eggs
2 teaspoons salt
In a medium pot on medium high heat, combine the milk, water and Chefs Life Cooking Oil. Bring to a boil then remove from heat. In a large mixing bowl, add the liquid to the tapioca flour and salt. Mix until dough is formed, then add in one egg at a time. Fold in the cheese. Using a 1inch cookie scoop, place the dough balls on a parchment lined sheet pan and bake at 400 for 20-25 minutes. Best enjoyed hot!
