Semi-Homemade Apple & Manchego Stuffing 

Oh, you didn’t make your stuffing from scratch? Said no one ever. Semi-homemade is the new black, or something like that. Your guests will be too busy tripping over this crunchy apple and cheesy bread combo to say anything but mmmhmmmm. 

Ingredients: 
  • Chefs Life Cooking Oil 
  • 12 oz store bought stuffing mix
  • 1 apple, sweet or tart, diced 
  • 1/2 yellow onion, diced 
  • 1/2 cup store bought trail mix 
  • 1 tbsp rosemary, chopped 
  • 2 tbsp Italian parsley, chopped 
  • 4 oz Manchego cheese
  • 2 cups chicken stock 
  • Zest 1/2 lemon
  • Maldon salt 
  • ¼ cup shredded parmesan

Method: 
Preheat the oven to 425. In a cast iron or saute pan, drizzle 2-3 tbsp of Chefs Life Cooking Oil. On medium high heat, cook the onions until just lightly softened, about 2-3 minutes. Add the apples, herbs and nuts, then stir to combine. 
Pour in the stuffing mix, then add the chicken stock. Using your hands, break up small chunks of Manchego cheese and spread evenly over the stuffing. Zest ½ lemon directly on top then stir to incorporate all the ingredients.
If baking in the cast iron, sprinkle the parmesan cheese on top, otherwise transfer to a baking dish before adding cheese. Bake for 45 minutes, or until the cheese is melted and browned on top.
