Shredded Brussels Sprouts Salad with Manchego + Dates

Another lunch hero salad. Raw Brussels sprouts get shaved finely, but keep their crunch for a few days so you can have the same sunlight salad moment again and again on your lunch break. Taking your zoom calls from the grass today? We won't tell.

Ingredients:

Dressing:
2 medium lemons, juiced
1 small shallot, minced
1 tbsp whole grain mustard
2 tsp honey
1/2 cup Chefs Life Blending Oil
Salt & pepper to taste
Salad:
16 oz Brussels sprouts, finely shredded
2 clementines, peeled and separated
1/2 cup dates, pitted and chopped
6 oz Manchego cheese, crumbled
1 cup smoked almonds, roughly chopped

Method: 

In a small bowl, whisk together all the ingredients for the salad dressing and set aside. In a large bowl, toss together the Brussels, clementine segments, date pieces, crumbled Manchego and smoked almonds. Toss with the salad dressing and let sit 10 minutes to soak in the dressing. Enjoy now or for the next 3 days.
