Super Easy Cold Peanut Noodles

Cold Peanut Noodles FTW 

Calling all peanut sauce lovers, this one's for you. Creamy, zesty and spicy, this cold peanut noodle dish comes together in less than 30 minutes.

Ingredients:

3 tbsp- peanut butter, natural and creamy
1 tbsp Chefs Life Blending Oil 
2 tbsp coconut aminos or soy sauce
1 lime, juiced
3 tsp Sambal Oelek
1 tsp rice vinegar
1 clove garlic, minced
1 pinch red pepper flakes
8oz rice noodles, cooked
1 large cucumber, peeled into thin strips
1 carrot, peeled into thin strips
1/4 head purple cabbage, sliced
4 mini peppers, sliced
3 scallions, sliced on a bias
1 tbsp black sesame seeds
Handful fo cilantro
1/4 cup dry roasted peanuts, chopped

Method: 

In a bowl, combine the peanut butter, Blending Oil, coconut aminos, lime juice, sambal, rice vinegar, garlic and red pepper flakes. Whisk until completely smooth, adding a bit of hot water if the sauce is too thick. Set aside.
In a large bowl, combine the rice noodles, cucumber, carrot, cabbage, peppers, half the scallion and half the peanuts. Toss using the reserved peanut sauce. Garnish with remaining cilantro, black sesame seeds and crushed peanuts.
